1 tbsp dijon mustard
2 tbsp minced shallot
1 tsp honey
1/4 tsp salt
1/8 tsp pepper
1/4 cup white wine or sherry vinegar
1/3 cup olive oil
a few “bouquets” of Mache greens
1 bunch of French Breakfast radishes, sliced lengthwise
fresh Chevre, baby Crotton, or your favorite cheese
good crusty bread, sliced in half
1 bunch of chives, cilantro or parsley (optional)
1. Whisk dressing ingredients together, adding olive oil slowly to emulsify.
2. Spread cheese on bread. Top with mache, radishes and herbs, and drizzle with dressing.
