Spicy Sriracha Salad Dressing

This is one of our favorite way to enjoy the head lettuces from the farm. Spicy salad dressing might sound a little odd to some of you but fear not!  This goes very well with baby head lettuce or any butterhead/bibb/boston type of lettuce.  The most key ingredient is Sriracha hot sauce.  http://blogs.inlandsocal.com/iguide/assets_c/2010/04/sri-thumb-300×300-42872.jpg.

You can find it in the asian section of most grocery stores.  Weis in Kutztown definitely has it in stock.

mayo    1 cup
sriracha   2  1/4  tsp
Juice of 1.5 – 2 limes
salt      1/2 tsp

Mix all of the ingredients together and stir to combine.  The recipe is very flexible, if you don’t want it too spicy only add 1 1/2 tsp of the sriracha or so.  Limes can also be tricky to use.  If they’re small and don’t feel very soft you might want to use 2 whole limes or sometimes half of a third one. I like the dressing spicy and limey!  This recipe should be enough dressing for 2 to 3 big salads worth.  It will store in the fridge for atleast a week or so.
